Last week was ‘National Honey’ week. A joyous celebration of all things sweet and made by British bees. I am lucky enough to a have a little apiary at the bottom of our garden, supplying our honey needs throughout the year.
This is a lovely autumnal cake, you can add a touch of spice to transform it into a festive bake.
50g Brown Sugar
3 Eggs (Beaten)
240g Self Raising Flour
- Pre heat the oven to 160
- Line an 8cm cake tin
- Melt the butter, honey and sugar in a pan, set to one side
- Place the flour in a large bowl, once cooled pour in the honey mixture and eggs. mix well, if there are a few lumps use a whisk.
- Bake for 40-45 minutes
- Heat 2 tbsp of honey and a touch of water, bring to the boil then pour over the hot honey cake
