Week 7: Bircher Muesli

I was living in Sydney for a short time last year and whilst I was out there I was introduced to a whole new breakfast experience. As I was doing foodie research I subjected myself to spending hours in their endless supply of cool, quirky cafés. It was here that I discovered a love for breakfast done the Australian way!

Australia has earned a reputation for being full of young beautiful beach babes and on arrival this reputation turned out to be totally true. This led me to the conclusion that they must all starve themselves, but no this was not the case. They love to eat, they just do it in a totally innovative healthy way. Avocados for breakfast? YES……so delicious grilled and served on toast.

Along with avocados, I fell totally in love with Bircher Muesli. For those of you who are unaware of this treasure, this is a dairy free, wheat free apple soaked oats. Doesn’t sound too appealing, but please trust me here, it is great. M&S and Pret both provide yummy pots of the stuff, but home made is best as you can personalise it to your tastes.

You have to make this the evening before, for the oats to plump up in the apply goodness, but once made, it will keep for a working week of breakfasts.


200g Rolled Oats

3 Eating Apples

600ml Coconut Milk/Coconut Water/Almond Milk

50g Chia Seeds (optional)

50 Pistachios (optional)

100g Dried Cranberries/Blueberries/Cherries (take your pick!)

Pinch of Cinnamon


  1. Peel and grate the apples
  2. In a large bowl add all the ingredients, give it a good stir
  3. Place in an airtight box and leave in the fridge for 12 hours
  4. Enjoy with natural yogurt and a sprinkling of pomegranate seeds or passionfruit
  5. Keep refrigerated for 5 days
