Autumn Veg Mid-Week Meals


As the Autumn nights draw in and the cold weather has us reaching for our woolly jumper, we look to our favourite nourishing comfort foods. However this does not mean being chained to the kitchen as you stir your stew. My Autumn Mid Week Meals are about delivering warming, tasty, cosy food from fridge to table in 30 minutes.

This Veg Mid Week Meals celebrates all my favourite veggie dishes, delivering meals with the veg taking centre stage with no compromise on flavour.

This workshop is all about cooking quickly; when time is short these recipes can be rustled up in under half an hour with no compromise on flavour. Lots of the dishes are inspired by my travels in Asia where food is cooked fast and flavoursome, your mid-week meals will transport you to India and Malaysia in just a few minutes.

Although we will be packing the flavour in, this doesn’t mean you need to stock up on a host of weird and wonderful ingredients. We will be using store cupboard essentials and freezer favourites. You will be able to bring together a feast for the family with what you have at home already.

  • Beetroot & Carrot Falafel Burgers

  • Leek & Cheddar Stuffed Skins
  • Blackbean Chilli Tacos
  • Butternut Squash Wellington
  • Parsnip & Parmesan Soda Bread
  • Spicy Chickpea and Tomato Soup

The workshops start at 10am and finish around 2pm, including time to enjoy what you have made. The sessions are relaxed but hands on so make sure you wear comfortable shoes, or even slippers! Tea and coffee will be available throughout. If you have any dietary requirements or food phobias please let me know in advance. The menus will vary so if there is anything that you would really like to try from the above, let me know.
